Sorry to bother you all … Have now solved the issue.
In case anyone reading this what's the solution this is the shortcode I ended up using in the view for my image:
[types field="holiday-item-images" width="150px" height="105px" align="none" resize="stretch" index="1" ][/types]
This outputs an image that is exactly 150px wide and 105px in height,
