Thanks for the screenshots – very helpful. Problem solved-

1) I didn’t have the option to “Don’t show empty terms”: In the part just above where it says “Select what content type to load” I had selected “Posts”, so that wasn’t an option.
No problem though as following your instructions in "3)" I was able to delete the taxonomy terms that I didn’t want showing up, which was my goal.
