Thanks for your feedback, there isn't option "to turn syntax highlighting off" in Views, I put it as a feature request in our to-do list, our developers will take care of it.
For CRED, you can try this:
Goto WP admin side-> CRED-> Settings/Import
disable the option "Enable Syntax Highlight for CRED forms"
