Hi Nick. I have just spent a few days trying to do this. Looking at your file structure I see a framework folder so guess you are working with a child theme? I found that if you are using a child theme you must place the woocommerce folder with the single-product.php in the PARENT folder, not the child's folder. This worked for me using Genesis theme.
