The thing is though, that if you switch to the twenty twelve theme and reload that page, the filter works perfectly fine at displaying more posts than the default number allowed in Views.
Also in my live site I have the same theme displaying the same View with 40 posts and that renders fine. So I really don't think it's a server or posts structure issue.
