I assume you have already read the document: "How do I convert existing custom types and fields to Types control?"

I suggest you make sure if it is needed to convert the post types "spresso_events, contacts, and espresso_venues" to be under Types control
If you just need control the custom fields and add more custom fields, you do not need remove those post types, you just need control the custom fields and add more custom field groups.
If you need more assistance for it, please post a downloadable URL for the theme "Events espresso", and describe detail steps to duplicate same problem, I need test in my localhost, thanks
