"Display Text" — that is self explanatory
"Custom field content" ===> NOT very self explanatory ===> "DATABASE VALUE" would be much better. There are SEVERAL articles that use terms like "Custom Value" which are ambiguous with regards to these 2 fields.
I have figured out that they meant the "Display Text" and so these and future articles NEED to be very careful about their wording.

"Custom field content" ===> Once Saved There should be a "LOCK" icon that you have to click to override so that you don't accidentally change it with a Warning window that pops up that says IF YOU CHANGE THIS ONLY NEW CONTENT WILL BE ABLE TO BE FOUND WITH A SEARCH LOOKING FOR THE ORIGINAL VALUE THAT WAS SAVE HERE,
AND/OR
and option that will allow the system to update the ENTIRE database with the NEW Value for this entry.
Hopefully this will make it more user friendly.
